1¼ lb ground beef
¾ yellow onion, chopped
3 stalks celery, chopped
4 cloves garlic, minced
¼ 6 oz can tomato paste
1½ 28 oz cans diced tomatoes
5 cups beef broth
5 potatoes, peeled and diced
½ tbsp Italian seasoning

Peas:
2½ tbsp butter
7 cups frozen peas
salt
black pepper
10 whole-wheat dinner rolls
Heat a large pot over medium heat. Add beef and cook until browned, about 4-5 minutes. Transfer out of pan and set aside.
Add onion and celery to the same pot. Cook until softened, about 4-5 minutes.
Add garlic and cook until fragrant, stirring occasionally, about 30 seconds.
Add beef, tomato paste, tomatoes, broth, potatoes, and Italian seasoning. Stir to combine. Bring to a boil, then reduce heat to medium-low and simmer for 20-25 minutes.
To serve, season with salt and pepper.
Cook the Peas:
Heat butter in a skillet over medium heat. Add peas and cook covered until tender, about 4-5 minutes.
Season to taste with salt and pepper.
Serve with dinner rolls.
